Salad with Parmesan & Fried Capers

Salad with Parmesan & Fried Capers

INGREDIENTS

  • 1 Cos lettuce, cut into 5cm pieces
  • 10 kale leaves, stems removed, leaves shredded
  • 1 avocado, diced
  • 1/2 cup parmesan, grated
  • 5 tablespoons baby capers, drained on paper towel
  • 1 tablespoon oil

Dressing:

  • 1/2 cup extra virgin olive oil
  • 2 teaspoons sesame oil
  • 1 tablespoon lemon juice
  • 1 teaspoon tahini
  • 1 small garlic clove, finely chopped
  • Salt & pepper, to taste

DIRECTIONS

  1. Whisk dressing ingredients together. Set aside.

  2. Place chopped kale into salad bowl and pour half of the dressing over the leaves. Massage the dressing into the kale with your hands, breaking down the toughness of the kale.

  3. Add lettuce, onion and avocado. Gently toss.

  4. Heat oil in frying pan over medium heat.

  5. Place dried capers into the pan and fry for 5-7 mins or until crispy.

  6. Add remaining dressing to salad and top with parmesan and crispy fried capers.
