Sweet Potato Mash

INGREDIENTS

  • 2 large sweet potatoes, peeled & chopped
  • 50g fresh ginger, peeled and finely chopped
  • 1 tablespoon finely chopped thyme, plus leaves for garnish
  • 1 tablespoon salted butter
  • Salt and pepper
  • Sour cream, to serve (optional)

DIRECTIONS

  1. Boil the sweet potato in salted water, until tender.

  2. Drain and mash sweet potato with ginger, thyme and butter.

  3. Season with salt and pepper and garnish with thyme.

Serve topped with sour cream, if desired.
