Chickpea Salad

Chickpea Salad

INGREDIENTS

  • 1 clove garlic, minced
  • 1 tablespoon tahini
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon honey
  • 1 tablespoon olive oil
  • 1 tablespoon water
  • 1 can chickpeas, drained & rinsed
  • 1 cup red onion, diced
  • 1 cup parsley, chopped
  • 150g Feta cheese, cubed
  • Salt and black pepper, to taste

DIRECTIONS

  1. In the bottom of a mixing bowl, whisk together the garlic, tahini, lemon juice and honey.

  2. Add the olive oil and continue whisking until combined. Add water and mix again.

  3. Add in chickpeas, red onion, parsley and feta and toss to coat.

  4. Season with salt and pepper.
Serve immediately, or refrigerate for later.
