Beef & Barley Soup

INGREDIENTS

  • 1kg lean beef mince
  • 1 onion, chopped
  • 1 garlic clove, minced
  • 2/3 cup pearl barley
  • 4 medium carrots, sliced
  • 2 sticks celery, sliced
  • 1 can diced tomatoes
  • 1L beef stock
  • 1 cup water
  • 1 can tomato soup
  • 1/4 cup parsley, chopped
  • Salt and pepper, to taste

DIRECTIONS

  1. Brown beef mince, onion and garlic in a frying pan. Drain well.

  2. Place been mixture ina slow cooker and add barley and remaining ingredients.

  3. Cover and cook on high for 2 hours, then reduce setting to low and cook for a further 5-6 hours.
