Beef & Barley Soup

EASY EATING
INGREDIENTS
1kg lean beef mince
1 onion, chopped
1 garlic clove, minced
2/3 cup pearl barley
4 medium carrots, sliced
2 sticks celery, sliced
1 can diced tomatoes
1L beef stock
1 cup water
1 can tomato soup
1/4 cup parsley, chopped
Salt and pepper, to taste
DIRECTIONS
Brown beef mince, onion and garlic in a frying pan. Drain well.
Place been mixture ina slow cooker and add barley and remaining ingredients.
Cover and cook on high for 2 hours, then reduce setting to low and cook for a further 5-6 hours.
