Mint Slice Truffles

CELEBRATE
INGREDIENTS
1 family sized (365g) packet Mint Slice biscuits
250g cream cheese, at room temperature
400g chocolate chips
150g white chocolate, optional for decoration
DIRECTIONS
Line two large baking sheets with baking paper. Set aside in freezer to get cold.
Place Mint Slice biscuits in a food processor and blend until crumbled.
Add cream cheese and process until no white traces of cream cheese remain.
Roll into walnut sized balls using hands, and place on baking sheets.
If mixture becomes too soft, place it in the refrigerator to harden.
Once all balls have been rolled, place baking sheets in the refrigerator for 45mins to set.
Once set, melt chocolate chips in microwave. In a glass bowl, microwave chocolate for 30sec on medium setting, stir and repeat.
Dip the balls into melted chocolate and place on backing paper to set.
Drizzle truffles with remaining white chocolate.
Store in the refrigerator, but allow to soften before eating.
