Cheesy Cauliflower Bake

EASY EATING
INGREDIENTS
2 medium heads of cauliflower, or 1kg frozen cauliflower florets
1 cup cream cheese
1/2 cup butter
1 1/2 cups shredded cheddar cheese
6 rashers bacon
1 tablespoon chopped spring onions
1/2 teaspoon salt and pepper
DIRECTIONS
Preheat oven to 200C.
Cook cauliflower in lightly salted water until softened.
Cook bacon until crispy and chop into small pieces.
Drain water from cauliflower, return to pot.
Add cream cheese and butter and mash until creamy.
Pour into a baking dish.
Top with shredded cheese, chopped spring onions and bacon.
Bake in oven at 200C for 20-30mins.
