Apple & Rhubarb Crumble

INGREDIENTS

Filling:

  • 6 Granny Smith apples, peeled and cored, diced
  • 1 cup of water
  • 1 tablespoon sugar
  • 200g rhubarb

Crumble:

  • 200g butter
  • 1 cup brown sugar
  • 1 cup self-raising flour
  • 1 cup rolled oats

DIRECTIONS

  1. Preheat oven to 180C.

  2. In a medium pot, cook apples, rhubarb, water and sugar over medium heat until fruit is soft.

  3. Pour into pie plate.

  4. In a medium sized bowl, rub butter into flour with finger tips. Add brown sugar and oats.

  5. Mix evenly with hands (or this can be done in a food processor on slow speed).

  6. Place crumble mixture over fruit in small heaps.

  7. Bake in oven for 30mins.

  8. Serve with cream or ice cream.
