Red Lentil & Spicy Sausage Stew

Red Lentil & Spicy Sausage Stew

INGREDIENTS

  • 2 tablespoons olive oil
  • 1 tablespoon sweet paprika
  • 3 garlic cloves, finely chopped
  • 1 chorizo sausage, cut into small chunks
  • 1 onion, finely chopped
  • 2 red capsicums, deseeded, chopped
  • 1L chicken stock
  • 6 roma tomatoes, chopped
  • 1 1/4 cups red lentils
  • 2 tablespoons chopped coriander
  • 2 tablespoons chopped parsley

DIRECTIONS

  1. Heat oil in a large heavy-based saucepan over medium heat.

  2. Add paprika and garlic and cook fro 30 secs.

  3. Add sausage, onion and capsicum and cook for 2-3mins until sausage begins to sizzle.

  4. Add stock, tomatoes and lentils, then bring to the boil.

  5. Reduce heat to low and simmer for 1 hour, adding additional water throughout cooking if stew is too thick.

  6. Season to taste.

  7. Ladle stew among bowls and sprinkle with herbs.

Serve immediately.
