Red Lentil & Spicy Sausage Stew

EASY EATING
INGREDIENTS
2 tablespoons olive oil
1 tablespoon sweet paprika
3 garlic cloves, finely chopped
1 chorizo sausage, cut into small chunks
1 onion, finely chopped
2 red capsicums, deseeded, chopped
1L chicken stock
6 roma tomatoes, chopped
1 1/4 cups red lentils
2 tablespoons chopped coriander
2 tablespoons chopped parsley
DIRECTIONS
Heat oil in a large heavy-based saucepan over medium heat.
Add paprika and garlic and cook fro 30 secs.
Add sausage, onion and capsicum and cook for 2-3mins until sausage begins to sizzle.
Add stock, tomatoes and lentils, then bring to the boil.
Reduce heat to low and simmer for 1 hour, adding additional water throughout cooking if stew is too thick.
Season to taste.
Ladle stew among bowls and sprinkle with herbs.
Serve immediately.
