Salmon with Garlic & Tomato Sauce
SERVINGS: 3
SOFT CHEW
INGREDIENTS
3 cloves garlic, chopped
1 fennel bulb, sliced
1 punnet cherry tomatoes
1 lemon
5 tablespoons olive oil
3 salmon fillets, skin on
Handful fresh mint
Handful fresh dill
DIRECTIONS
Chop garlic and slice fennel, then squash the tomatoes.
Halve the lemon and finely slice.
Add 3 tablesspon oil to a hot frying pan and fry the garlic until it caramelises. Add the tomatoes and cook until soft.
In another frying pan, heat 2 tablespoons oil on a medium-high heat.
Season the salmon and cook, skin side down, for 3 mins.
Turn salmon and add lemon slices to the pan. Cook for 2mins, or until the salmon is cooked to your liking.
Finely chop the mint and dill, and stir through the sauce.
Serve salmon topped with sauce.
